4. How the Event Rolls
The format of a meat club event will vary depending on the recipe that is being made that day or night, but here's the basic construct:
Family Meal - Typically we eat first, gulp down a beer, and catch up with our peeps before diving in. But sometimes a recipe will have a logical break in the action, like when you make Hot Dogs and have to wait 30 minutes for the meat to chill in the freezer before proceeding, where a family meal fits perfectly.
Prep - Chop the meat, grind the meat, measure out the spices, soak the casing. Pull together the mise-en-place ahead of time so that you don't miss anything, and you're not scrambling to add a final ingredient during the meat production.
Do It - Make the meat. You know, like ya do.
Clean Up - Seriously dudes, don't leave a damn mess. We've said it before, we'll say it again. Nothing will piss off the missus more than when she finds ground meat caked to the kitchen floor the next morning. Even if you make the argument that it was at least delicious meat.
Drink - After the clean up is done, the bottles of whiskey come out of the cabinet. Toast to thy meat.
